You don't need to put it in the fridge just fry it one time then put it on the colander wait till it fully dry out then put them back into the hot temperature cooking oil and DO NOT move mix or shake them while they're on the oil and wait till it cook on its own then dry them out so its ready to eat I know this cuz we used to sell French fries on the street

I have my fridge set to 36 so it stays cold and is below the "danger zone". Never had lemons get moldy 😅 not sure what is about.
